Georgian cheese: sulguni, imeruli, guda, tenili and where to taste them

Georgia’s cheese map runs from the Black Sea lowlands to the high passes of Tusheti, and no two regions make it the same way. The four cheeses worth learning before you travel are imeruli, the mild fresh cheese of Imereti that forms the base of most other Georgian cheeses and of khachapuri imeruli; sulguni, the stretched, brined cheese of Samegrelo and Imereti that can be eaten fresh, smoked or baked into bread; guda, a firm sheep’s-milk cheese matured inside a leather or skin sack in the mountains of Tusheti, Khevsureti and Pshavi; and tenili, a rare, hand-pulled cheese from the Meskheti region around Vale, made by only a handful of families today.

The short answer on where to taste them properly: Imereti and Samegrelo for sulguni and imeruli at source, a mountain guesthouse in Tusheti or Khevsureti for real guda, and Samtskhe-Javakheti if you want to try to find tenili, which is increasingly scarce outside specialist shops and a few village producers. Tbilisi‘s markets and food workshops are the easiest single stop if your itinerary does not stretch to all three regions, and a cheese course works well alongside a Georgian wine tasting, since both rely on the same farming calendar and the same instinct for fermentation.

The main cheeses and their home regions

Georgia’s dairy sector is still largely smallholder-based, which is why cheese quality and style can vary from one village to the next even within the same region; national livestock and dairy figures are tracked by the state statistics office, useful background if you want the industry context behind what is essentially a farmhouse product.

How each cheese is made

Imeruli starts the chain: fresh cow’s milk is curdled, drained in cloth or baskets, lightly salted and eaten within days, or brined for longer storage. Sulguni takes imeruli-style curd a step further: the curd is heated and kneaded in hot whey or water until it becomes elastic, a process close to the pasta filata method used for mozzarella, then shaped into wheels and brined. Smoked sulguni (sulguni mogrili) is hung over beech or fruitwood smoke after brining and is a specialty of Samegrelo kitchens. Guda is different again: sheep’s milk curd is pressed and packed into a cleaned, salted animal skin, then matured for weeks or months in a cool cellar or cave, which gives it a dense, slightly gamey character quite unlike the lowland cheeses. Tenili is the most laborious: curd is washed, then pulled by hand into fine threads that are layered and compacted in a clay pot (churi) to mature, sometimes with wild herbs folded in. Food safety and labelling standards for dairy products made in Georgia, including raw-milk cheeses, fall under the national food safety authority, and producers selling commercially are required to register and meet hygiene rules even when the method itself is traditional.

Imereti and Samegrelo: the cheese belt of western Georgia

Most of the cheese on a Georgian table, from khachapuri filling to the elarji of Samegrelo, traces back to these two neighbouring regions. Imereti’s green, well-watered pastures suit small dairy herds, and Kutaisi‘s Green Bazaar is one of the best places anywhere in the country to see rounds of imeruli and fresh sulguni sold straight by the producers who made them that morning, alongside churchkhela and seasonal fruit. Samegrelo, further west toward Zugdidi, is the historic home of sulguni and of elarji, the cornmeal-and-cheese dish that only works with a cheese that stretches properly when hot. Guda in the high mountains

Guda is a shepherd’s cheese, and it tastes like one: salty, dense, aged in conditions that have barely changed. It belongs to Tusheti, Khevsureti and Pshavi, where transhumance (moving flocks between summer and winter pasture) is still practised, and the cheese was traditionally a way to preserve summer milk through the year. The best place to try it is a guesthouse table in Omalo, Dartlo or Shatili rather than a shop, since most guda sold outside the mountains has travelled some distance and lost some of its character. Tenili, the rare one

Tenili survives today mainly around the villages of Samtskhe-Javakheti, particularly near Vale, and production has shrunk as fewer families keep the skill alive. It is worth seeking out precisely because it is uncommon: sharper and more textured than sulguni, with a slightly sour, herbed edge when wild thyme or other plants are worked in during ageing. Finding it is not guaranteed on a short visit, and GTour cannot promise availability at any given farm since household production fluctuates by season and by family. Cheese fairs and the harvest calendar

Georgia does not run one single, fixed national cheese festival in the way some countries do; instead, regional agricultural fairs and dairy producers’ days appear through the farming year, often timed around rtveli, the autumn harvest, when mountain herds come down and village markets are at their fullest. Dates and locations change annually and are usually announced closer to the season by regional authorities or farmers’ associations, so the only reliable approach is to check listings shortly before you travel rather than planning a trip a year out around a specific fair. Farm opening hours, tasting availability and whether a household will sell directly to visitors can all change without notice, since these are working farms rather than commercial attractions; booking through a guide or a tour operator who knows the current state of a given dairy avoids wasted detours.

Pairing cheese with Georgian wine

The pairing logic in Georgia runs the opposite way from much of Europe: cheese here is generally an everyday, slightly salty counterpoint to wine rather than a dessert course. Fresh imeruli and young sulguni sit comfortably with crisp amber or white wines made in qvevri, the traditional clay-vessel method recognised by UNESCO as an element of intangible cultural heritage, since the wine’s own tannin and acidity cut through the cheese’s salt. Aged guda, being denser and sharper, suits a fuller red such as Saperavi, which can stand up to it, while smoked sulguni works surprisingly well against a semi-sweet style if you want contrast rather than balance. Bringing cheese home

Dairy products are one of the more commonly restricted categories in international travel, and rules differ by destination rather than by departure point, so Georgian export rules alone will not tell you whether your home country allows it. Before buying cheese to carry home, check the customs and biosecurity rules of the country you are flying to directly, since many destinations outside the EU and some within it restrict or ban raw-milk or unpasteurised dairy imports regardless of quantity. Within the EU, personal import of dairy products from outside the bloc is generally restricted unless commercially packaged and within small personal allowances, and the rules are published by the European Commission; check the current position for your route before you pack. Vacuum-sealed, commercially labelled sulguni from a shop is far more likely to clear customs smoothly than a loose wheel bought at a farm gate, and airport security in Georgia treats solid cheese as a normal checked or cabin item rather than a restricted liquid, though this is worth confirming with your airline if you are travelling with a large quantity. When in doubt, eat it here and buy packaged churchkhela or wine as the souvenir instead.
