Chubini Wine Cellar is a small, family-run winery in the village of Shilda, in the Kakheti region of eastern Georgia. It focuses on natural, authentic wines made using the traditional qvevri method, in which grapes ferment and age in large clay vessels buried underground — a practice recognised as part of Georgia’s intangible cultural heritage and still widely used across Kakheti.

Shilda lies within the Kvareli area of the Alazani Valley, one of the country’s principal wine-growing districts, within reach of Kvareli town, Nekresi monastery and the Gremi historical complex. The region is generally accessible by road from Telavi or Tbilisi, making it a convenient stop for those touring Kakheti’s wineries and historic sites.

This cellar suits travellers interested in traditional qvevri winemaking and smaller, family-run producers rather than large commercial estates, as well as those combining a wine visit with exploration of the wider Alazani Valley landscape and its monasteries and villages.

Wine — Kakheti, Georgia

Chubini Wine Cellar is a small, family-run winery that makes natural and authentic Qvevri wines. It was started by Tornike Chubinidze, who, at just 25 years old, moved from Georgia’s capital, Tbilisi, to the village of Shilda in Kakheti in 2016 to begin his own winemaking journey.

In September, Chubini crushes its first grapes, and by 2017, the winery bottled its first vintage of wine. Even though we produce only a small amount, our wines have been exported to ten countries on three continents—showing our focus on quality rather than quantity.

In 2021, Chubini started a new project to offer
